Wild Game and Fowl is an elective in the West Coast Culinary Diploma Program. Delivery is classroom, field school and hands-on in the culinary kitchen at our Terrace campus.
The focus is on the traditional fabrication and cooking of wild game and fowl. Travel to experience the fabrication of local game and fowl. Processing of these food sources will be experienced with a focus of Indigenous methods along with modern methods and techniques. You will cook the wild game and fowl items in various ways utilizing effective cooking methods to take advantage of the unique characteristics of wild meats.
This course is an elective (one of 2 required) of the West Coast Culinary Diploma Program.
